I’ve been taking my lunch to work since the beginning of the New Year as a resolution, but I’m getting really tired of lunchmeat. It’s all starting to taste the same by now so I’m going to make some adjustments and come up with some new homemade sandwich fillings that are easy to make.
I went online with my clear-internet to find some recipes for sandwich fillings and I came up with all kinds of stuff. But I want something that I can make in bulk and use for at least a few days without it going bad. I came up with chicken salad to fill that order.
I did find a recipe that sounded relatively easy. I’ve never made chicken salad before, I’ve just always bough! t the store bought stuff before. But it turned out pretty well and it was nice to take to work instead of ham and cheese or peanut butter and jelly sandwiches. I think that variety is the key to making sure that I stick with this New Year’s resolution I made.
